Creamy pumpkin pasta

Olive oil
1 medium onion, diced
2 cloves of garlic, crushed
1 tin of pumpkin puree (400g homemade)
1 tsp of dried sage
½ tsp of nutmeg
30g grated Parmesan cheese
Pasta (whatever you have in the cupboard)
Salt and pepper to taste

In a saucepan, bring salted water to the boil and cook the pasta as usual.

While the pasta cooks, heat a little oil in a frying pan over a medium heat. Add the onion and garlic and cook until the onion is soft. Don’t allow to caramelise.

Add the pumpkin, sage, nutmeg and Parmesan. Cook for about 10mins until hot through.

Drain the pasta, keeping about 50ml of the pasta water. Add this to your pumpkin sauce, stirring in gradually until incorporated.

Mix the pasta into the sauce and add salt and pepper to taste. Garnish with Parmesan if desired.

If you’d prefer to make this a meat dish, fry some chopped bacon or pancetta and add this to the top of your pasta when serving.
