Crispy herb and lemon potatoes

Herby oregano with crisped potatoes and a hit of lemon make for a delicious side on any table.
1kg red potatoes, thickly sliced
3 tbsp olive oil
1 garlic clove, crushed
2 lemons, zested
2 tbsp dried oregano
Preheat the oven to 190°C / 375°F / Gas mark 5.
Line 2 baking trays with greaseproof paper and set aside.
Toss the potatoes with the olive oil, garlic, lemon zest and oregano in a large bowl.
Season generously with salt and pepper.
Arrange the potato slices in a single layers on the trays and roast for 35 minutes or until golden and crispy.
