Double chocolate nut cookies

Watch these double chocolate nut cookies disappear when your kids are around! These are so easy to make and you can even freeze the cookie dough so they're ready to bake in times of cookie emergencies.
Oil, for greasing
125g unsalted butter, at room temperature
70g caster sugar
70g Demerara sugar
1 egg
60g dark chocolate, broken into small chunks
60g white chocolate, broken into small chunks
80g selection of nuts, chopped roughly
140g plain flour
1 tsp bicarbonate of soda
Pinch of salt
Preheat the oven to 190°C/ gas 5. Grease a baking tray or two and line with greaseproof paper.
Combine butter, caster sugar and Demerara sugar in a bowl. Use an electric mixer to cream the ingredients together until the mixture is light and fluffy.
Mix in the egg, and then stir in the chocolate chunks and nuts.
Sift the flour, salt, and bicarbonate soda into the mix and combine well.
Using a teaspoon, place rounds of the mixture onto the baking trays, ensuring to leave a good amount of space between each one.
Transfer to the oven for 15-20 minutes, until golden brown in colour. The cookies should have doubled in size! Leave the cookies to cool on a wire rack.
