Easy chicken pie
A delicious and effortless dinner that your kids will love

1 onion, chopped finely

400g pack skinless chicken thighs, cut into chunks

1 tbsp olive oil

150ml chicken stock

325g can sweetcorn, drained

6 tbsp crème fraîche

Chopped parsley (just a handful)

750g potatoes, cubed

Preheat the oven to 180C. Fry the chicken in olive oil for 5-10 minutes until the onion is soft and the chicken is golden. Add the stock and bring to the boil. Reduce heat and simmer for 20 minutes until the chicken is cooked fully. Stir in the corn, crème fraîche and the herbs.

While the chicken is simmering, in a separate pot boil potatoes until soft. Drain and mash with butter and remaining crème fraîche. Transfer the chicken mix into pie dish and cover with mash. Bake in the oven for 15-20 or until potato is golden.
