Mix the yeast with the water and let sit for about 3 minutes. Meanwhile, combine flour with salt. Add the water to the flour and start mixing with a spoon. When the dough comes together, turn onto a floured surface and knead for 6 to 8 minutes. Place in a bowl covered with a damp cloth and let rise for about 2 to 3 hours.
Cut into 3 or 4 equal-sized balls of dough and let rise for another 30 minutes.
Heat the oven to 250°C or as hot as it can go. Place a baking tray upside down in the middle of your oven. Flatten the dough, place on baking paper and give it a round shape. Spread the passata, chunks of mozzarella and other desired toppings. Season with salt, pepper, and a drizzle of olive oil. Transfer the baking paper onto the hot baking tray in the oven and cook for 10 minutes.
