Eggcup cheese tarts with spring onions

Well worth making, these are a special starter or side going well with salads or soups.
6 slices bread, crusts removed
40g butter
6 eggs
2 spring onions, chopped
70g cheddar, grated
Preheat the oven to 180°C / 350°F / Gas mark 4.
Using a rolling pin, flatten each of the bread slices.
Spread both sides of each slice with butter and press each into the insides of a muffin tin.
Crack an egg into the centre of each and sprinkle with the chopped spring onion and grated cheese.
Bake for 18-20 minutes, until the eggs have just set.
Serve while still warm with a salad or soup.
