Falafel salad
Falafels are a traditional Middle Eastern food and go great with a mixed summer salad.
 

1 can of chickpeas

2 garlic cloves

1 onion, minced

1 red chilli

Handful of coriander

2 tbsp flour

2 tsp cumin

1 tsp olive oil

Handful lettuce leaves

4 cherry tomatoes, quartered

1 red onion, sliced

½ cucumber, sliced

Combine your chickpeas, garlic, onion, chilli, coriander, flour and cumin together in a large bowl using a hand blender.

Turn the mixture onto a clean surface and shape into balls.

Heat your oil in a frying pan and gently fry your falafels until golden brown.

Make sure they are heated through before putting on your place. Serve with lettuce, tomatoes, red onion and cucumber.
