Forrest fruit compote with crunchy light topping
An easy and fruit filled treat to make when you don’t have much time.
 

3 apples, peeled and thinly sliced

50g ready to eat apricots, roughly chopped

4 tbsp ginger jam, or more to taste

500g frozen forest fruits

200g crunchy oat cereal

50g pine nuts

Heat grill to high. Lay the apple slices and apricots in a shallow, microwaveable baking dish, then add the jam and a splash of water.

Cover and cook for 5 minutes or until the fruit starts to soften.

Add the frozen fruits and mix through.

Re-cover and cook for another 3 minutes until defrosted.

Mix together the cereal and pine nuts in a bowl then spoon over.

Grill for 2 minutes until golden.
