Fried courgettes

These light rosemary infused fried courgettes make a lovely side dish.
600g courgettes
3-4 tbsp plain flour
Splash olive oil
Sprig fresh rosemary
Slice the courgettes in a food processor, using the fine disc, or by hand as thinly as possible and pat dry on a clean tea towel.
Using a plastic bag or shallow plate, toss the slices in well seasoned flour, to coat.
In a large frying pan, heat the olive oil with the rosemary, add ¼ of the courgettes.
Fry the courgettes in batches on medium high heat for 2-3 minutes until light golden.
Drain on kitchen paper, serve hot having removed the rosemary.
