Fried rice with chorizo

Fried rice with chorizo
Chorizo gived the rice a depth of flavour all the family will love. 

1 tbsp olive oil

2 chorizo sausages, cubed

2 eggs, lightly beaten

600g cold cooked rice

2 tbsp light soy sauce

2 spring onions, sliced

80g petis pois

Heat the oil in a large frying pan over medium heat.

Add the chorizo and cook until it begins to colour and it is cooked through. 

Remove the chorizo and crack the egg into the saucepan. 

Lightly scramble the egg, allowing it to maintain consistency. 

Add the rice and chorizo to the pan and toss to combine.

Add the soy sauce, toss to combine and cook until all the ingredients are heated through.

Add the spring onion, toss through and serve immediately.
