Full Irish lasagna
A great recipe when you have to cook breakfast for an army!

12 slices white bread, crusts cut off

6 bacon rashers

8 sausages

8 slices white pudding

8 slices black pudding

12 eggs

6 slices tomato

½ tsp mixed herbs

1 can beans, to serve

Soft butter

Cook the bacon, sausages, white and black pudding in a large frying pan. Set aside.

Scramble the eggs. Set aside

In a large ovenproof dish, place 6 slices of white bread and brush with soft butter.

Place the rashers on one layer. Chop the sausages, black and white pudding into bite-size chunks. Spread over the layer of rashers. 

Add the scrambled eggs to create an even layer. 

Top with the 6 remaining slices of bread and brush with butter. Place a tomato slice on each slice of bread, sprinkle with mixed herbs and bake for 30 minutes. 

Serve with a side of beans.
