Garlic and chilli beef

Easy tender beef made with budget friendly cuts make Mum happy and the family smile.
1 tbsp black peppercorn
6 garlic cloves
2 red chillies, left whole (optional)
4 tbsp red wine vinegar
600g piece well-trimmed beef skirt (from butcher)
In a pestle and mortar, crush the peppercorns and garlic with a pinch of salt to a paste, then stir in the vinegar.
Sit the beef in a non-metallic dish, then rub all over with the paste.
Leave in the fridge for a 2 hours.
Place a griddle pan over a very hot heat.
Rub the marinade off the meat, then season with a little more salt.
Add the chillies in at this point if using which will infuse the dish with that chili kick.
Cook the meat for 5 minutes until charred on for rare.
If the cut is very thick, you may want to roast it in a hot oven for 5 mins after browning.
Lift onto a chopping board, allow to rest for 5 minutes before slicing and serving with salad or chips if you like.
