Gourmet beef burger

500g minced beef
1 clove garlic
1 tbsp tomato purée
1 tbsp Worcestershire sauce
2 tbsp chopped flat-leaf parsley
8 slices pancetta
4 burger buns, halved and toasted
4 thick slices vintage cheddar
pinch of sea salt and cracked black pepper
salad leaves, caramelised onion relish or tomato chutney, to serve
In a bowl, combine the mince, garlic, tomato purée, Worcestershire sauce, parsley, sea salt and black pepper.
Divide into 4 equal parts. Wet your hands and shape each part into a flat patty. Cover each side of the 4 patties with a slice of pancetta. Take a non-sticking pan and heat on medium-high heat. Put the patties in the pan and cook for about 4 minutes.
Place the bottom of the toasted buns onto serving plates. Top each bun with a patty, a slice of cheese, salad leaves, the onion relish or the tomato chutney. Cover with the top of the buns and serve while hot.
