Grilled asparagus with cheesy toasts, roasted garlic

These delicious toasts are filled with spring and topped with melted cheese and a hit of garlic.
1 medium head garlic, unpeeled
3 tbsp olive oil, divided
Salt and freshly ground black pepper to taste
700g thick stemmed asparagus
4 thick-cut slices ciabatta or sourdough bread
Handful basil, roughly torn
50g white cheddar cheese, grated
50g Parmesan cheese, grated
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
Coat the head of garlic with 1 tablespoon olive oil, salt, and pepper.
Place on the baking tray, and roast for 45 minutes until golden brown.
Once the garlic is roasted, cut the head in half horizontally, exposing all the cloves.
Squeeze cloves into a bowl, discarding the skins.
Whisk in 2 tablespoons of olive oil, salt and pepper then set aside.
Place asparagus spears over a heated grill with a little oil and cook until tender and slightly charred, turning during the cooking time.
While asparagus is cooking, spread the roasted garlic mixture on the bread.
Mix the cheeses together in one bowl.
Remove the asparagus from the grill, cut in half then layer the asparagus over the bread,sprinkle generously with the basil, top with both cheeses and bake until the cheese has melted.
Serve with a salad if you like.
