Haddock with lentils

Wholesome fish dinner, which is full of fibre and nutrients.
100g puy lentils
1 small onion, diced
1 carrot, finely chopped
1 celery stalk, finely chopped
300ml vegetable stock
1 tbsp crème fraiche
½ lemon, zested
200g haddock fillets
1 bunch dill
Add the lentils to a medium saucepan along with the onion, carrot and celery.
Pour over the stock and bring to the boil. Give it a stir, then reduce the heat, cover and simmer for 20-25 minutes, until the lentils are tender.
Heat the olive oil in a frying pan over a medium heat.
Once the lentils are cooked, stir in the dill.
Divide the lentils between 2 plates and top with haddock.
