Hallowe'en cupcakes

130g self raising flour
130g caster sugar
130g butter
2 eggs - lightly beaten
2 tbsp cold milk

Butter icing:
200g icing sugar
150g butter
Few drops of food colouring or paste

Preheat the oven to 200°C/400°F/Gas 6.

Put 12 paper bun cases into a bun tray.

Place the flour, sugar, butter, eggs into a bowl. Beat all of the ingredients together with a mixer or wooden spoon until the mixture is smooth and creamy. Add the the milk and mix again.

Divide the bun mixture evenly between the 12 bun cases.

Place in the oven on the top shelf and bake for about 12-15 minutes until golden.

Cool on a wire tray.

To decorate:

Cream the butter in a bowl for 5 minutes.

Add the icing sugar and mix well - keep mixing until the icing has changed colour and is making a plopping sound when being mixed!

Add food colouring if being used. Use a cocktail stick to dip into the food colouring as this will control the amount you are adding. You can always add, but you can't take away.

Pipe onto each bun or use a knife to smooth icing over the top of each bun. Decorate with a scary jelly.

For very vibrant icing colours, use colour pastes instead of bottles of food colouring and you will get a richer/deeper end result.
