Herb and chilli pan fried potatoes
Lovely fried potatoes with a hit of fresh coriander and chilli

1.5kg potatoes, peeled

3 tbsp olive oil

1 small red onion, thinly sliced

2 garlic cloves, finely chopped

1 red chilli, deseeded and finely chopped

Small handful fresh coriander, roughly chopped

1 tbsp red wine vinegar

Cover the potatoes with cold water, add a large pinch of salt and bring to the boil.

Turn the heat down and simmer for 15 minutes, until the potatoes are nearly cooked.

Drain and leave until cool enough to handle.

Slice the potatoes into 0.5cm thick discs.

Use a large heavy based frying and heat the oil.

Add the potatoes and red onion and fry over a medium-high heat, turning them occasionally until they begin to brown.

Add the vinegar, garlic, chilli and coriander and continue to cook the potatoes for 5 minutes more, until they are golden and crisp.

Season with salt and pepper and serve hot sprinkled with a bit of fresh coriander if you like.
