Lamb chops with fresh mint and herb sauce

An easy main course for a special occasion with an injection of flavour for the succulent lamb.
1 ½ tbsp olive oil
4-6 lamb loin chops
25g roasted peanuts
Handful mint, roughly chopped
Handful coriander
1 garlic clove
Rub a little oil onto each side of the lamb chops and season with salt and pepper to taste.
Grill on medium-high heat for 5 minutes then turn over and cook 5 mins more for medium or 7 minutes more for well done.
Use a food processor to blitz the rest of the ingredients with the remaining oil to a rough paste. S
erve the chops with the pesto drizzled over along with any vegetables desired.
