Leek pastry party tart

In ideal meat free dish for a gathering and simple to make.
Plain flour, for work surface
1 sheet ready roll puff pastry, thawed
2 tbsp butter
6 leeks (white and light-green parts), halved lengthwise and thinly sliced crosswise, rinsed well
1 clove garlic, finely sliced
75g Paremesan cheese, grated
Preheat the oven to 190°C / 375°F / Gas mark 5.
Line a baking tray with greaseproof paper and set aside.
On a lightly floured work surface, halve the pastry lengthwise in two.
Lightly score each half 1cm from the edges, creating a border and prick the pastry inside the border all over with a fork.
Chill for 15 minutes, then bake until golden brown, about 20 minutes.
In a large skillet over medium heat, melt the butter then add the leeks and season with salt and pepper.
Stir to combine.
Cover and cook for 5 minutes.
Uncover and cook for a further 5 minutes.
Remove the cooked pastry from the oven, sprinkle the Parmesan over top and layer the leeks on top.
Place on a chopping board and serve on the buffet table with a sharp knife for cutting into wedges or small slices.
