Lemon cupcakes

Lemon cupcakes
Perfect lemon cupcakes, great for parties and bake sales.

115g caster sugar

115g butter

1 egg

115g self-raising flour

2 drops lemon extract


140g icing sugar, sifted

85g butter

1 drop lemon extract

1 tbsp milk

Preheat oven 180°C/350°F/Gas mark 4.

Line cupcake or muffin tray with paper cases.

Cream butter and sugar.

Add egg and beat together.

Sift flour and fold gently in.

Add lemon drops, milk and mix together.

Spoon the mixture into cases and bake for around 10-15 mins.

Remove from the oven and leave to cool before spreading.


In a mixing bowl, beat togther icing sugar and butter.

Add lemon extract and milk. Beat until smooth.
