Lentil Stew
Lentils are a great source of protein, especially for vegetarians. 

2 tsp olive oil

1 white onion, chopped finely

1 clove garlic, chopped finely

1 red pepper, chopped

1 green pepper, chopped

1 carrot, sliced

1 courgette

1 tsp oregano

400g tinned tomatoes

400g brown/green lentils

In a frying pan, sauté the garlic and onion in the olive oil and allow to soften.

Add all of the vegetables and the oregano and cook over medium heat for 5-10 mins or until the veg has softened slightly.

Add the tomatoes and the lentils and simmer for a further 15-20 mins.

Serve hot with rice, or maybe even spaghetti!
