Lime posset with raspberries

Lime posset with raspberries
There are only four ingredients required for this fresh summer dessert and you can make a day in advance if desired.
 

200ml double cream

4 tbsp caster sugar

3 tbsp lime juice (about 3 limes), plus zest 1 lime

Handful of raspberries, gooseberries, redcurrants

Have 2 dessert glasses ready.

Pour the cream and add the sugar into a saucepan. 

Heat until just boiling, and then boil rapidly for just over two minutes while stirring continuously.

Turn off the heat, stir in the lime juice and most of the zest and the berries. Divide in half between 2 glasses.

Place in the fridge to chill for at least two hours, overnight preferably and then serve with some fresh raspberries and a little lime zest.
