Mackerel spread
Mackerel is a source of omega-3 fats, which are important for your baby’s brain and eye development. This spread is a suitable alternative to pate, which you need to avoid during pregnancy or breastfeeding.

200g cooked mackerel fillet (you can buy these vacuum packed in most supermarkets)

100g reduced-fat crème fraiche

1 lemon

1 stick celery, finely sliced

1 tsp olive oil

1 tsp paprika (optional)

Fresh parsley (optional)

Freshly ground black pepper

Peel the skin off the mackerel and place the flesh in a food processor.

Add the creme fraiche, the zest and juice of the lemon and a few leaves of parsley (if using).

Whiz for 20 seconds or so, or until you get a nice creamy spread.  Mix in the celery before serving.

Serve on small slices of brown soda bread and sprinkle with paprika (if using).

If you don’t have a food processor, simply use a fork to break up the mackerel and mix in the crème fraiche and other ingredients with a spoon.
