Mexican chicken three bean stew

250g Moy Park chicken breast fillet pieces
2 garlic cloves, crushed
1 tbsp mild chilli powder
1 red pepper, cut into chunks
4 tomatoes, chopped
300ml chicken stock
100g pinto beans
100g kidney beans
100g black eyed beans
Small bunch fresh coriander
Cook the onion and garlic in olive oil until softened. Add chill powder and peppers and cook for a couple of minutes. Add the chicken and fry until cooked. Stir in the tomatoes and stock and bring to a simmer.
Add the beans and cook for another 15-20 minutes until thickened.
Stir in the coriander and serve in bowls with pitta bread.
