Mexican lasagne

Mexican lasagne
This recipe uses flour tortillas instead of the traditional pasta sheets.

2 tbsp olive oil

500g beef mince

1 onion, chopped

1 red chilli, finely sliced

1 tin black beans

1 tbsp Tabasco sauce

100g corn

1 tin chopped tomatoes

150g Chorizo, sliced

1 spring onion, finely chopped

6 flour tortillas

Preheat the oven to 220°C/ 425°F/ gas mark 7. Lightly grease an ovenproof dish. Leave in the oven to keep warm.

Heat the oil in a pan over a medium heat. Cook the mince until it is brown. Add the onion and chilli.

Spoon the bean mix, Tabasco sauce and corn in the mince mix. Cook until the beans are heated through, about 2 minutes. Add the tomatoes. Cook for another minute.

Pour 1/3 of the beef mix into the ovenproof dish. Top with two tortillas.

Continue until all of the mince and tortillas are used up. Sprinkle the cheese over it and place the chorizo on top.

Garnish with the spring onion before placing in the oven for 30 minutes until the cheese is golden.
