The combination of sweetness, refreshing citrus and mint flavors are intended to complement the potent kick of the rum, and have made this one of the most popular summer drinks.
Fill a rocks glass with ice.
Muddle 8 of the mint sprigs, the simple syrup, and the lime juice in a cocktail shaker until the mint is broken up.
If you can't find simple syrup, make it by putting 1 part water to 2 parts sugar - boil in saucepan for a few minutes until sugar is dissolves, stirring constantly. Remove from heat and cool.
Add ice to the shaker and then the rum and shake vigorously.
Strain into the glass, garnish with the remaining mint sprig and the lime wheel, and serve.
