No bake lime cheesecake

A super easy zesty cheesecake.
250g digestive biscuits
125g butter, melted
375g cream cheese
Zest and juice of 3 limes
2 tsp vanilla extract
400g condensed milk
10g sachet of gelatine (optional)
Grease and line a 20cm spring form tin.
Using a food processor, crush the digestive biscuits and add the melted butter, ensuring to mix well.
Divide the mixture; use half to press firmly into the bottom of the tin and the other half for the sides of the tin. You can use a straight sided glass to press firmly into the side of the tin.
Place in the fridge for 20 minutes
In a clean bowl beat the cream cheese until its smooth. Add the zest and vanilla extract and mix thoroughly.
Dust the gelatin sachet over the mixture and slowly add the condensed milk and lime juice while beating the mixture until smooth.
Pour into the tin and refrigerate for at least 4 hours (overnight is better). Decorate with a slice of lime.
