Oven roasted vegetable and sweet potato salad with fresh herbs
A warm winter salad perfect which makes an ideal starter

4 sweet peppers, (all colors) seeded and quartered

2 courgettes cut in half lengthwise

1 small red onion, skinned and cut into thick disks

5 small plum tomatoes cut into quarters

3 medium sweet potatoes peeled and cut into 1 cm disks

15ml olive oil

½ bunch chives, chopped

½ bunch parsley, chopped

30ml balsamic vinegar

Salt and pepper to taste

Toss all prepared vegetables except tomatoes in olive oil.

Preheat oven to 160ºC / 350ºF / Gas Mark 4.

Roast vegetables in large roasting pan until tender and lightly browned.

Coarsely chop grilled vegetables and combine with rest of ingredients.

Season to taste with salt and pepper.
