Parsnip and carrot mash

A beautiful dish to serve anytime of the year but particularly during the festive season.
750g carrots, peeled and roughly chopped
750g parsnips, peeled and roughly chopped
50g butter
Small bunch chives, to garnish
Put the prepared vegetables in a pan covered with water and simmer for 40 minutes or until soft.
Drain and mash with the butter or use a food processor and blitz with the butter until smooth.
Sprinkle over the chopped chives and serve.
