Pasta bake with mozzarella and cherry tomatoes

1 tbsp olive oil
100g broccoli
6 red cherry tomatoes
6 yellow cherry tomatoes
1 medium red onion
4 tbsp white wine (optional)
200 ml double cream
Salt and freshly ground black pepper
300g penne pasta, cooked as per packet instructions
4 slices prosciutto, cut into strips
150g grated mozzarella
Preheat the oven to 180°C/ 350°F/gas 4
Heat the oil in a frying pan and lightly fry the onion, broccoli and tomatoes for 3-4 minutes. Add the wine to the pan, reduce and then pour in the cream. Add salt and pepper to taste.
Bring the sauce to a simmer and cook for 4-5 minutes, then stir through the cooked penne pasta. Put into a gratin dish and scatter the prosciutto and mozzarella over the mixture before placing in the oven to bake for 5-6 minutes or until the mozzarella is melted.
