Pear cake

This deliciously simple pear sponge cake makes for a perfect family dessert.
250g butter
300g caster sugar
4 eggs
300g plain flour, sifted
2 tsp baking powder
4 tbsp milk
6 pears, peeled, cored and sifted
1 tbsp demerara sugar, to sprinkle
Grease and line a 23cm springform cake tin.
Cream together the butter and sugar. Add the eggs one at a time, beating between each addition.
Fold in the flour and baking powder
Pour in the milk and stir to combine.
Scoop half of the batter into the tin.
Spread the sliced pears out on top and cover this with the rest of the batter. Sprinkle with demerara sugar.
Bake in the preheated oven for about 35 minutes or until a cake skewer comes out clean.
