Pesto chicken pasta
Chicken and pesto go amazingly well together, this dish is simple and very quick to make.

1-2 tbsp of extra-virgin olive oil

4 skinless chicken breast fillets, cut into pieces

4 tbsp of premade, good quality pesto sauce

300g dried pasta of choice

2 tbsp of parmesan cheese, grated for topping

Place your chicken pieces into a bowl, add the pesto sauce and stir well. Set aside.

Bring a large saucepan of salted water to the boil then add in the pasta and cook according to the packet instructions.

Meanwhile, in a large frying pan, on a medium heat cook the chicken pieces with pesto until they are fully cooked and they have gone crispy and golden. Turn off the hob immediately once they are done.

Drain the pasta and mix into the pan with the chicken and the sauce.

Sprinkle the parmesan cheese onto each portion, then serve.

The chicken in the pesto sauce when cooking can spit, so if you have one, use a splatter screen. Or stir at arms length.
