Pineapple and coconut pancakes

These pancakes have a lovely tropical flavour and make a lovely dessert idea.
110g plain flour, sifted
Pinch of salt
2 eggs
200ml milk mixed with 75ml water
50g butter
200g crushed pineapple
110g desiccated coconut
2 tbsp golden syrup
In a large bowl combine the flour, coconut, eggs, milk and crushed pineapple together to form the batter. Heat the oil in a large frying pan over a medium heat. Pour a rounded tablespoon of batter onto the hot pan and flatten slightly.
Fry the batter for 1-2 minutes and when bubbles begin to appear, flip over to cook the other side until golden brown. Set aside and keep warm while you make the rest of the pancakes.
To serve, stack up 3-4 pancakes per person, drizzle generously with golden syrup and top with a dollop of crème fraîche and stack pineapple rings between each pancake if desired.
