Plum traybake

Lovely plum cake which will be enjoyed by all the family.
8 plums, stones removed and quartered
200g caster sugar
4 eggs, lightly beaten
240ml vegetable oil
1 tsp vanilla extract
1 tsp lemon zest
2 tbsp natural yoghurt
250g self-raising flour
1 tsp baking powder
Preheat oven to 190°C/375°C/Gas 5.
Grease and line a 20cm square cake tin.
Beat the eggs and sugar together in a bowl and whisk well.
Gradually pour in the oil and vanilla extract and continue whisking.
Add in the lemon zest and yoghurt and mix together well.
Sift in the flour and baking powder and fold together.
Pour the batter into the tray and gently press the plum quarters into the top.
Bake in the preheated oven for 35 minutes or until cooked through.
Leave to cool on a wire rack, before slicing and serving
