Pork casserole with dumplings

Pork casserole with dumplings
The little dumplings on top will mean this is one dinner the kids will devour.

500g pork fillet, cubed

2 tbsp olive oil

200g onion, peeled

1 carrot, thickly cut

250ml white wine

500ml chicken stock

1 tbsp water

1 red pepper, sliced

2 courgettes, sliced

1 tsp cornflour

130g self-raising flour

20g margarine

2 tbsp fresh herbs, chopped

80ml skim milk

Lightly coat a large pot with oil and cook the pork on a high heat for 5 minutes. Add the onions and cook until they are brown.

Next, combine the carrots, wine and chicken stock and bring to the boil.

Reduce heat and simmer for 30 minutes.

Add the pepper and courgette for a further 15 minutes.

In a separate bowl, blend the cornflour with 1 tablespoon water.

Stir into the pot and cook until it is thick and boiling.

To make the dumplings, combine the flour and margarine in a bowl until it looks like breadcrumbs. Add the herbs and milk.

When it is a soft dough, turn it out onto a floured surface and knead for 1 minute.

Divide into 8 round balls

Place dumplings on top of casserole and cook for a further 15 minutes.
