This mouth-watering pork is so easy to prepare. The slow cooker does all the work.
180g ketchup
1 tbsp light muscavado sugar
4 garlic cloves, finely chopped
¾ tsp dried sage
½ tsp dried oregano
Salt and ground pepper
600g pork shoulder, boned and sliced in half (from butcher) 600g pork gigots can also be used
Soft rolls and coleslaw to serve.
In the slow cooker, stir together half of the ketchup with the sugar, garlic, sage, oregano, 1 teaspoon of salt, and ½ teaspoon of pepper.
Add the pork turning, to coat well.
Cover, and cook on low until the meat is very tender and falling apart, about 8 hours (or on high for 6 hours).
Transfer the pork to a large bowl.
Using a large spoon, skim off and discard any fat from the surface.
With two forks, pull the meat apart until shredded.
Pour any juices from the slow cooker over the pork.
Add the remaining ketchup, and stir to combine.
Season with salt and pepper.
Serve on soft rolls and coleslaw for a mouth watering meal.
