Really cheesy biscuits

100g butter

100g flour

100g cheese

fennel seeds

cayenne pepper

caraway seeds, poppy seeds, cumin seeds and paprika

For the egg wash:

1 egg yolk

1 tbsp water

Combine the butter, flour and cheese into a soft dough using a food processor.

Shape the dough into a 5cm diameter log. Wrap in plastic film and leave in the refrigerator for 30 minutes.

Preheat the oven to 190°C. Cover 2 baking trays with baking paper.

Take the plastic film off the log and slice it as thinly as possible. Place the slices on the baking trays.

Add a tablespoon of water to the egg yolk and mix well. Glaze the slices by brushing them with the egg wash. Sprinkle with the seeds, cayenne pepper or paprika.

Put in the oven for about 4 or 5 minutes, until they get a warm golden colour. Place them onto a wire rack and let them cool down. You can store these cheese biscuits in an airtight tin.
