Delicious bread you can serve before or with dinner.
2 tbsp vegetable oil (like rapeseed or sunflower oil)
2 medium onions – chopped finely
480g self raising flour
Pinch of salt
2 tbsp chopped chives
Pinch chilli powder
45g pitted green olives – chopped finely
2 eggs
280ml milk
Preheat the oven to 200°C/400°F/Gas 6 and lightly grease a baking sheet.
Pour a little vegetable oil into a frying pan and fry the onions until soft. Remove from the heat and set aside to cool a little.
Next using a large mixing bowl mix the salt, flour, chives, chilli powder and green olives. Mix well until combined.
Then add the onions and mix again.
In a separate jug, beat the eggs and add the milk. Pour the egg/milk mixture into the dry ingredients and mix to form a soft dough.
Empty the dough onto a lightly floured surface and knead it gently to bring it together. Shape the dough into an oval and place it on the prepared baking sheet.
Score several slashes to the top of the dough using a sharp knife.
Bake in the preheated oven for about 35 - 40 minutes, or until a little risen and golden brown. The bread should sound hollow when tapped underneath. (If you wish to bake the loaf in a loaf tin then you will need to bake for an extra half hour and turn down the heat to 180°C/360°F/Gas Mark 5)
Transfer to a wire rack to cool fully.
