Salmon with a cheese crust
The topping on these salmon fillets are deliciously crunchy.

50g softened butter

4 salmon fillets

Salt and pepper, to season

2 tbsp flaked almonds

2 tsp parsley

50g Parmesan cheese, grated

Half tsp oil

100g breadcrumbs, divided in 70g and 30g

Preheat the oven to 180°C/350°F/ gas 4. Grease an ovenproof dish with the half of the butter.

Coat the tops of the salmon fillets with the remaining butter. Season with salt and pepper.

In a small bowl, combine the almonds, parsley, cheese and 70g of the breadcrumbs together. 

Add the oil.

Use your hands to coat the top of the salmon with the almond, cheese and breadcrumb mix.

Sprinkle the leftover breadcrumbs on top.

Place in the oven for 20 minutes until the salmon is cooked through and the top is crispy.

Serve with roasted vegetables or homemade potato wedges.
