Slow cooked lamb casserole
This twist on the traditional pork casserole has a delicious Mediterranean flavour.

500g lamb, diced

1 tbsp olive oil

1 onion, peeled and sliced

2 cloves garlic, finely chopped

2 stalks lemon thyme

100g mushooms, halved

1 red pepper, diced

40g black olives (optional)

400g diced tomatoes

250ml gravy

Parsley to garnish

Preheat the oven to 180°C/ gas mark 4. Lightly grease an onvenprrof dish.

Pour the oil into a sauce pan over a medium heat and gently cook until it is brown. Add the onion and garlic and cook for a further 5 minutes.

Pour in the gravy and add the lemon thyme, pepper, olives and tomatoes. Stir well to combine.

Pour into an ovenproof dish and place in the oven for 2 – 2 ½ hours.

Garnish with the parsley.
