Smarties birthday cake
This is a regular in our house and is something similar to what my mother used to make for me when I was a child. Birthday cakes here have to be homemade and have to have smarties on top!
 

200g soft butter

200g self raising flour

1 tsp baking powder

200g caster sugar

4 eggs

2 tablespoons milk

For the buttercream filling:

75g butter

100g icing sugar

1 tablespoon milk

Drop of vanilla essence

Pre-heat oven to 180⁰C/Gas mark 4. (Fan oven 160⁰C).

Cream the sugar and butter together and then add all the remaining ingredients. 

Place in two greased and lined sandwich tins (approx. 20cm diameter).

Bake for approx. 20-25 mins. (Do the skewer test).

Leave to cool down.

Mix the buttercream fillings all together and spread between the two sponges.

Cover the cake with plenty of icing (made from preferred quantities of icing sugar and water).

Leave for a few moments for icing to settle (some will dribble down the sides).

Place smarties all over the top (my children like to do this part, and did the one in the picture, they are aged 6 and 5).

Tie a ribbon around the edge to hide the many imperfections.

Decorate with candles. 

Allow icing to dry out completely and then enjoy.
