Smoked salmon canapés

Smoked salmon canapé nibbles with Italian influences make an excellent beginning when you have guests.
1 small rustic loaf, cut into small rounds, then halved if too large
100g mascarpone
120g smoked salmon trimmings
1 small red onion, very finely chopped
A few dill sprigs, snipped
2 tsp small capers
Preheat the oven to 160°C / 325°F / Gas mark 3.
Line a baking tray with greaseproof paper and set aside.
Evenly layer the bread slices onto the tray and lightly toast.
Season the mascarpone with salt and pepper then and spread onto the bread.
Scatter over the salmon, red onion, dill and capers, then sprinkle over some pepper and serve.
