Stewed lamb with chickpeas

This delicious stew is simple and budget friendly.
2 tbsp vegetable oil
1kg stewing lamb
2 onions, chopped
2 garlic cloves, finely sliced
4 tbsp tomato paste
2 x 400g tinned chickpeas, drained
1 small sweet potato, deseeded, peeled and cubed
400g tinned sweetcorn, drained
Boiling water (as needed)
Spring onions, sliced for garnish
Crusty bread to serve, optional
Heat the oil in a deep cooking pan and brown the lamb, stirring.
Add the onions and fry for another few minutes before tipping in the garlic.
Add the paste, some salt and pepper and stir to mix through.
Pour in the chickpeas and some boiling water halfway up the pan and bubble for 5 minutes.
Reduce the heat and leave to simmer for 30 minutes.
Add the sweet potato and the corn and simmer for a further 30 minutes.
Serve with crusty bread if you like.
