Lovely Strawberry tart with a delicious creamy filling.
Pastry
220g plain flour
100g caster suagr
Zest of 1 lemon
Pinch of salt
150g butter, cut into cubes
2 egg yolks
Filling
100g cream cheese
250ml crème fraiche
5 tbsp caster sugar
1 tsp vanilla extract
Pinch of Salt
Topping
500g strawberries, sliced
2 sprigs of mint
Place the flour, sugar, salt and lemon zest into a large mixing bowl and stir together.
Rub in the butter until the mix resembles breadcrumbs.
Stir in the egg yolks and bring together to form a dough, cover and chill in the fridge for 30 minutes.
Heat the oven to 180°C/350°F/Gas 4.
Butter a 23cm loose-bottomed tart tin and sprinkle with flour.
Roll out the pastry on a lightly floured work surface into a circle, use it to line the prepared tin.
Bake for 20 minutes. Leave to cool in the tin before transferring to a serving platter.
