Tasty tacos
For a fun-filled Mexican dinner for the whole family

454g lean minced beef
1 red pepper – very finely diced.
1 tsp cumin
1 tsp mild paprika
1 tsp dried oregano leaves
Salt and freshly ground black pepper
400ml passata (or use a tin of chopped tomatoes and blitz with hand blender or food processor until smooth)
1 red pepper
½ head of shredded iceberg lettuce
2 tomatoes, chopped
1 carrot, grated
Grated cheddar cheese
1 avocado, peeled and chopped
Hard and/or soft tacos shells (allow approximately 2 each)
Sour cream
Salsa, to serve

Preheat the oven to 180°C/350°F/Gas 4.

Heat a large non-stick frying pan over high heat. Add the mince and cook until browned – use a fork to break it up into small pieces. To make this a healthy dish, move the meat to one side of the pan and allow the fat to run to the other side of the pan. Remove this from the pan using a spoon into a cup. Allow to harden before disposing of – do not put it down the sink.

Add in the finely chopped pepper and allow to cook for a few minutes.

Next add the paprika, cumin, oregano, salt and pepper. Mix well to combine and then pour in the passata.

Reduce the heat to low and allow to simmer for 20 minutes to cook the mince fully. You can add a little water if it becomes too thick. Taste and add more pepper and salt if necessary.

Heat the taco shells in the oven for 5 minutes. If using soft wraps, microwave a stack of them on a plate for approximately 1 minute – turn them over and microwave for another 30 seconds. If using the oven, wrap them in tin foil first.

To serve, lay out the table and place all of the other ingredients in small bowls. Put the warm taco shells or wraps on a serving plate in the middle.

Allow everyone, including the kids to choose what they want in their own taco.
