Tomato carpaccio with capers

Such a simple but impressive dish that works perfect as starter as it won't fill you up. The use of the balsamic vinegar and olive oil will ensure your taste buds are satisfied when finished.
4 beef tomatoes, finely sliced
1 tsp olive oil
1 tsp balsamic vinegar
110g mozzarella cheese, grated
4 tbsp of capers
Slice your tomatoes thinly and put them in a bowl.
Add the oil and vinegar and toss the tomatoes ensuring they are fully coated.
Divide the slices between four serving plates. There should be about 9 slices for each person.
Sprinkle a tbsp of capers over each plate and garnish with the cheese.
