Coddle is a hearty, nutritious dish and is the ultimate in comfort food.
3 tbsp vegetable oil
2 medium onions, thinly sliced
6 pork sausages
2 carrots, peeled and finely sliced
150g Brussel's spouts
4 large potatoes, finely sliced
Salt and pepper
500 ml stock (beef, chicken or vegetable)
Preheat the oven to 200 °C or gas mark 6
Heat the oil in a large frying pan on a medium heat and gently cook the onions for about 5 minutes.
Cut your sausages in half and toss them into the pan. Cook for about 3 minutes before adding your sprouts. Cook for another 2 minutes.
Spoon your sausage mix into an oven proof dish and layer on your carrots and potatoes. Season with salt and pepper.
Pour over your stock before placing in the oven for about an hour or until the potatoes are cooked through.
Remove from the oven and leave to sit for about 5 minutes before serving.
