Two Ingredient energy bars
You can’t go wrong with these two ingredient energy bars. No cooking, no baking and perfect for the lunchbox.
 

450g pitted dates

270g rolled oats + extra for coating

Line a 17 x 27cm baking tin with greaseproof paper and set aside.

Place dates into a food processor and blitz until it has a jam-like consistency. You can add one tablespoon or two of hot water to achieve this if the dates are very dry.

Add oats one cup at a time until it's all in, stirring each time you add a cup and the mix starts to pull away from the sides of the bowl. Press mixture into the baking tin.

Sprinkle top with oats and freeze for 1-2 hours.

Cut into fingers and roll in extra oats to coat.

Wrap individual fingers in baking paper and store in an airtight container.
