Broccoli tots

This recipe turns broccoli into a treat.

350g broccoli, cut into small florets

1 small white onion, finely diced

100g shredded cheddar cheese

1 egg, beaten

50g Mr. Crumb Fresh Breadcrumbs

2 tbsp parsley, finely chopped

1 tsp red pepper flakes

Salt and pepper

Preheat oven to 200°C/400°F/Gas 6.
Bring a medium saucepan of water with salt to a boil and blanch the broccoli for 2 minutes. Drain and finely chop the cooked broccoli. 
In a large mixing bowl, add broccoli, onions, cheddar, egg, parsley, salt, pepper, red pepper flakes and Mr. Crumb Fresh Breadcrumbs. Mix well and refrigerate for 20 minutes.
Line a baking tray with parchment paper. Shape about one ice-cream scoop size of the mixture into tot shapes and spread on prepared baking tray. Bake for 10 minutes, until golden. Flip and bake for an additional 10 minutes on the other side.
