Hazelnut and goji oat bars
A healthy bar to satisfy your sweet tooth
180g oats
140g flour
1 tsp baking powder
1 tsp cinnamon
100g coconut oil, melted
2 ripe bananas, mashed
50ml maple syrup
1 egg
1 tsp vanilla extract
150g goji berries
50g hazelnuts, roughly chopped
3 tbsp chia seeds
For the yoghurt drizzle
30g Greek yoghurt
15g cream cheese, softened
30g powdered sugar
Preheat oven to 180ºC. Line a square tin with parchment paper.
In a medium bowl, mix together the oats, flour, baking powder and cinnamon. Add the coconut oil, mashed bananas, maple syrup, egg and vanilla extract and combine. Finally, add the chia seeds, goji berries and chopped hazelnuts.
Pour the mixture in the prepared tin, pressing down well. Bake for 20 minutes.
Meanwhile, combine all ingredients to make the yoghurt drizzle. When the oat cake is cooled down, cut into rectangular shapes. Drizzle with the yoghurt mixture and let dry.
